Arugula and clementine salad

Ingredients
- 4 cups of baby arugula, washed and wrung out
- 1 cup of cherry tomatoes cut in half
- 1 avocado cut into strips and drizzled with lime
- 1/2 pound of akkawi cheese
- 3 tbsp of Ionia extra virgin olive oil
- 2 tbsp of wine vinegar
- 1 clementine
- Nuts, to taste
- Salt
Preparation
- In a large bowl, mix all the vegetables and the cheese, except the avocados.
- In a small bowl, whisk together the vinegar, oil and pepper.
- Add the salad dressing and mix.
- Gently mix in the avocado strips.
