Ejje (Middle Eastern Omelet)

Ingredients
- 8 eggs
- 1 tablespoon of flour
- 1 teaspoon of pepper
- 1 onion
- 100g of parsley
- Canola oil
- Salt
Preparation
- Peel and chop the onion
- Beat eggs and add the parsley, onion, flour, salt and pepper
- Heat oil in a frying pan
- Pour a few tablespoons of the mixture in the skillet and brown each side of the omelet
- To remove excess oil, drain the omelet on paper towels.
- Repeat step 5 if desired and serve
