Grilled eggplant salad (El-Rahib)

Ingredients
- 1 regular eggplant
- 1 large tomato
- 1 green pepper
- 4 shallots
- 5 radishes cut into rings
- Chopped Italian parsley
- A few chopped mint leaves
- A chopped clove of garlic
- Lemon juice, salt and olive oil to taste
Preparation
- Put the eggplant on a baking sheet and grill on both sides.
- Take out the eggplant and put in cold water to cool.
- Remove the peel of the eggplant and dice it.
- Dice the tomato, the pepper and the shallots.
- Mix the chopped garlic with salt, lemon and olive oil.
- Add all the ingredients to a bowl and mix gently before serving.
