Ingredients
- 1 kg octopus
- to cook the octopus, you need:
- 6 cups of water
- 1 onion cut in two
- 1 carrot
- 2 bay leaves
- Salt
- For the salad, you need:
- 2 small colored peppers cut in small pieces
- 1 small red onion cut in small pieces
- 1/2 bunch of parsley chopped
- 1 squeezed lemon
- olive oil
- Salt and pepper
Preparation
- Rinse the octopus under cold water. Drain. Cut and separate the tentacles from each other.
- In a large saucepan add the water, octopus, onion, carrot, bay leaves and salt. Bring to boil and let it cook for one hour.
- In a large bowl, mix the octopus with the remaining ingredients. Season with salt and pepper and mix. Serve warm or cold.
