Shish taouk chicken orzo

Ingredients
- 30 ml (tbsp) of olive oil
- 2 small breasts of Adonis shish taouk chicken
- 1 chopped onion
- 2 small zucchini cut into small cubes
- 30 ml (2tbsp) of chopped garlic
- 250 ml (1cup) of orzo
- 45 ml (3 tbsp) of fresh chopped parsley
- 15 ml (1 tbsp) chopped fresh oregano
- 60 ml (1/4 cup) fresh lemon juice
- 500 ml (2 cups) of chicken broth
- Salt and pepper for taste
- 500 (2 cups) of baby spinach
- 1/2 container 200g of crumbled feta
- 10 cherry tomatoes
Preparation
- Preheat the oven to 180C (350F)
- In an ovenproof skillet, heat half the oil over medium heat. Brown the chicken breasts for 1 to 2 minutes per side. Continue baking for 25 to 30 min until the inside of the chicken has lost its pink hue. Remove from the oven and place the breasts on a plate. Cover with aluminium foil and let stand for 5 minutes before slicing
- Meanwhile heat the remaining oil in another skillet. Cook the onion, zucchini and garlic for 1 to 2 minutes
- Add the orzo, herbs, lemon juice and chicken broth. Season with salt and pepper. Bring to boil then simmer for 8 to 10 minutes over medium heat, stirring constantly until the liquid is completely absorbed
- Add the spinach, feta and tomatoes. Stir and cook for 2 minutes
- Serve chicken with orzo mixture
