Butternut squash soup
2-4 people
Ingredients
- 3-4 cups of Chicken broth
- 2 tablespoons of butter
- 1 clove of garlic
- 1 chopped onion
- 1 celery stalk
- 1 big carrot
- 1 big potato
- 1 medium butternut squash
- Salt and pepper
Preparation
- Wash the vegetables and cut them in cubes
- Brown the onion with the butter
- Add all the vegetables and cook for 5 minutes
- Cover with broth and simmer over low heat for 40 minutes
- Put everything in a robot and mix until you get a smooth soup
- Put back on the stove and add the remaining broth.
- Salt and pepper and serve.
