Mediterranean chickpea salad

Ingredients
- 2 cups of zucchinis
- 2 cucumbers
- One can of chickpeas, drained and rinsed
- One cup of cherry tomatoes, cut in half
- Half a cup of red bell peppers
- 2 Tbsp of chopped onions
- Half a cup of crumbled feta cheese
- Half a cup of kalamata or Lebanese olives
- One tbsp of chopped fresh basil
- One tbsp of chopped coriander
- One glove of garlic, minced
- One tsp of dried oregano or Italian herbs
- Salt and pepper to taste
- Olive oil to taste
- Balsamic vinegar to taste
Preparation
- In a large bowl, add all the ingredients.
- Add the balsamic vinegar, the olive oil and mix well.
