Grilled eggplant with vegetables

Ingredients

  • 2 eggplants
  • 2 zucchinis
  • 1 red, green and yellow pepper
  • 1 tomato
  • 1 onion
  • 2 gloves of garlic
  • 2 Tbsp of rosemary
  • 1 Tbsp of thyme
  • 1 pinch of parsley
  • Salt and pepper

Preparation

  1. Mince the garlic.
  2. Cut the onions in small pieces.
  3. Finely chop the parsley, rosemary and thyme.
  4. Cut the eggplant into slices of 0.5 to 1 cm.
  5. Cut the zucchinis, peppers and tomato into small pieces
  6. On a baking sheet, put the eggplant slices and cover them with the vegetables. Drizzle some olive oil all over the vegetables.
  7. Add salt and pepper to taste.
  8. Bake at 350 degrees Celsius for 30- 40 minutes.
