Grilled eggplant with vegetables

Ingredients
- 2 eggplants
- 2 zucchinis
- 1 red, green and yellow pepper
- 1 tomato
- 1 onion
- 2 gloves of garlic
- 2 Tbsp of rosemary
- 1 Tbsp of thyme
- 1 pinch of parsley
- Salt and pepper
Preparation
- Mince the garlic.
- Cut the onions in small pieces.
- Finely chop the parsley, rosemary and thyme.
- Cut the eggplant into slices of 0.5 to 1 cm.
- Cut the zucchinis, peppers and tomato into small pieces
- On a baking sheet, put the eggplant slices and cover them with the vegetables. Drizzle some olive oil all over the vegetables.
- Add salt and pepper to taste.
- Bake at 350 degrees Celsius for 30- 40 minutes.
