Beef couscous gratin, tomatoes and zucchini

Ingredients
- 2 tbsp olive oil
- 450g medium-lean ground beef
- 1 onion diced
- 1 tbsp chopped garlic
- 2 zucchinis, sliced
- 1 1/2 cup couscous
- 1 cup tomato sauce
- 1 1/2 cup beef broth
- 1 tsp cumin
- 1 tsp ground coriander
- 1 bay leaf
- 1 tbsp dried thyme
- Salt and pepper to taste
- 1 1/2 cup grated italian cheese blend
Preparation
- Preheat the oven to 190 C
- In a saucepan, heat oil over medium heat. Cook ground beef for 5 to 7 minutes, breaking up the meat with a wooden spoon, until it has lost its pink tint.
- Add onion, garlic and zucchini. Cook for 2 to 3 minutes. Remove from heat.
- Add couscous, tomato sauce, broth, spices and herbs. Season with salt and pepper and stir. Transfer the mixture to a baking dish and equalize the surface.
- Cover with aluminum foil. Bake for 20 minutes until all liquid is absorbed.
- Remove foil and sprinkle with cheese. Continue baking for 5 minutes
- Turn oven to broil and bake for 3 to 4 minutes, until cheese is golden brown.
