Penne alla Vodka

Ingredients
- 400g penne
- 1 onion, chopped
- 2 garlic cloves, minced
- 400g crushed tomatoes
- 60ml vodka
- 125ml heavy cream
- 4 tbsp olive oil
- Grated Parmesan
- Salt and pepper
- Fresh parsley
Preparation
- Cook the pasta al dente.
- Sauté the onion and garlic in olive oil.
- Add the vodka and let it reduce.
- Stir in the tomatoes and simmer for 10 minutes.
- Add the cream and season with salt and pepper.
- Toss with the pasta, top with Parmesan, and serve with parsley.
