Avocados stuffed with tabouli

Ingredients
- Cedar bulgur 180 ml (3/4 cup)
- Chopped fresh parsley 60 ml (1/4 cup)
- 2 small plum tomatoes, seeded and diced
- Crumbled goat cheese 125 (1/2 cup)
- 4 avocados
- Fresh lemon juice 60 ml (1/4 cup)
- Optional: chopped fresh mint 60 ml (1/4 cup)
Preparation
- Cook bulgur as directed on the package
- Ginning bulgur with a fork. Let cool
- In a bowl, mix the lemon juice with a little olive oil
- Add parsley, tomatoes, goat cheese, red onion, mint (optional). Season with salt and pepper
- Cut the avocados in half lengthwise and remove the cores
- Garnish each avocados with tabouli
