Mediterranean style beef fondue

Ingredients
- 1 tbsp olive oil
- 1 zucchini, cut into pieces
- 1 eggplant, cut into half slices
- 1 onion, chopped
- 1 tbsp chopped garlic
- 4 cups chicken broth
- 1/3 cup chopped dried tomatoes
- 1 tbsp balsamic vinegar
- 2 tsp dried Italian herbs
- 1 tbsp capers
- 1 tbsp lemon zest
- Pepper to taste
- 300 g sliced beef fondue
- 1/2 cup sliced Kalamata olives
- 1 cup crumbled feta cheese
Preparation
- Preheat the oven to 205 C.
- In a large saucepan, heat oil over medium heat. Cook zucchini, eggplant, onion and garlic for 2 to 3 minutes.
- Add chicken broth, sun-dried tomatoes, balsamic vinegar, Italian herbs, capers and lemon zest. Season with pepper. Bring to a boil.
- Add sliced beef and stir gently. Simmer for 2 to 3 minutes over low heat.
- Divide mixture among four cassolettes and top with olives and feta cheese. Bake for 5 to 6 minutes.
- Turn oven to broil and continue cooking for 3 to 4 minutes, until feta is lightly browned.
