Mediterranean style beef fondue

Ingredients

  • 1 tbsp olive oil
  • 1 zucchini, cut into pieces
  • 1 eggplant, cut into half slices
  • 1 onion, chopped
  • 1 tbsp chopped garlic
  • 4 cups chicken broth
  • 1/3 cup chopped dried tomatoes
  • 1 tbsp balsamic vinegar
  • 2 tsp dried Italian herbs
  • 1 tbsp capers
  • 1 tbsp lemon zest
  • Pepper to taste
  • 300 g sliced beef fondue
  • 1/2 cup sliced Kalamata olives
  • 1 cup crumbled feta cheese

Preparation

  1. Preheat the oven to 205 C.
  2. In a large saucepan, heat oil over medium heat. Cook zucchini, eggplant, onion and garlic for 2 to 3 minutes.
  3. Add chicken broth, sun-dried tomatoes, balsamic vinegar, Italian herbs, capers and lemon zest. Season with pepper. Bring to a boil.
  4. Add sliced beef and stir gently. Simmer for 2 to 3 minutes over low heat.
  5. Divide mixture among four cassolettes and top with olives and feta cheese. Bake for 5 to 6 minutes.
  6. Turn oven to broil and continue cooking for 3 to 4 minutes, until feta is lightly browned.
