Garlic sauce


Servings: 4 to 6 people

Ingredients

  • 4 garlic cloves
  • 1/2 tsp salt
  • 1 cup vegetable oil (canola or sunflower oil)
  • 1 tbsp fresh lemon juice
  • 1 egg white
  • 1 tbsp cold water

Preparation

  1. Peel the garlic cloves and remove the germ (for a milder taste).
  2. In a blender or with an immersion blender, blend the garlic with salt and the egg white until smooth.
  3. Slowly drizzle in the oil in a very thin stream while blending at medium speed.
  4. Alternate with the lemon juice and water to stabilize the emulsion and achieve a creamy texture.
  5. If the sauce is too thick, add a bit of cold water and blend briefly. If it’s too runny, add more oil in a thin stream and keep blending.
  6. Transfer the sauce to an airtight container and refrigerate for at least 30 minutes before serving.
  7. Store for 4-5 days in the fridge due to the egg white.
