Ingredients

  • 12 zucchini flowers
  • 200 g ricotta
  • 50 g grated Parmesan
  • 1 egg
  • Salt and pepper
  • Olive oil
  • For the batter: 100 g flour, 150 ml cold sparkling water, Salt.

Preparation

  1. Mix the ricotta, Parmesan, egg, salt, and pepper.
  2. Carefully stuff the zucchini flowers with the mixture.
  3. Prepare the batter by mixing flour, sparkling water, and a pinch of salt.
  4. Dip the flowers in the batter and fry in hot oil until golden brown.
  5. Drain on paper towels and serve hot.
